Characteristics:   Common white fish used in sushi restaurants. The white meat is taken from the area around the fish’s fin and is called the engawa, which means “porch”, medium-firm texture and good taste. Fluke sashimi is also a new trend at fine dining restaurants.

As sashimi, cut in various thickness, according to the chef’s preference and presented artfully.
