|Grilled mushroom wafu saladSudachi is small, round and green citrus fruit, similar to yuzu. However, sudachi is considerably smaller than yuzu, is green rather than yellow, and is pulpier. It is used as food flavoring.The fruit is also the symbol of the perfecture of Tokushima where the majority of the fruit is cultivated. The fruits form in bunches, or tight clusters, and are harvested in the fall. It also boasts a higher calcium and ascorbic acid (vitamin C) content than lemons.
